Center Cut Takes Over Albertville's Steffens Meats
The Rogers-based meat market has expanded to Albertville with the move after longtime butcher Gary Steffens hung up his cleaver.
Gary Lies, of Annandale, has worked in meat markets for other 30 years, so when the opportunity presented itself to open a meat market in Rogers seven years ago, he took it. Center Cut Meats took off in Rogers and is a well known meat market as well as caterer for many local community groups.
Fast forward to this past November, Gary , owner and butcher at Steffens Meats in Albertville wanted to retire. Lies and business partner, Pam Workman decided to take on another meat market.
“We’ve had really good reception from the community,” Lies said last week.

A few weeks back, tried their hand at a social media group discount deal, Groupon and were shocked with the result.
“2,000 Groupons were sold in 8 hours,” Lies said.

Center Cut Meats has added many new products to the market since last November including a lot of marinated meats, brats and even more homemade salads. Many of the recipes between Steffens and Center Cut Meats were similar, Lies has just added to some of them. All of their meats are from family farms, the farthest being out of Wisconsin. Butchering and packaging takes place at the newest Albertville location.
“So you know where it all comes from,” Lies said. “And there’s NO !”
In addition to the freshness, Lies prides himself on his prices and also that they can provide any specialty cut. “We’re here to provide what the customer wants.”
Though Steffens had sold his business to retire, he’s still a part of the business. “[Gary] works part time for us, as well as most of his staff,” Lies said. Lies' oldest son is currently running the Rogers location while he runs Albertville and continues to grow the business.
“We’re going to add a lunch buffet,” Workman said. “It will be all homestyle-cooking ready for fast take out.”
The pair are also open to any suggestions.
“Let us know what you want to see and want us to carry and we’ll see what we can do,” Lies said.
As they settle into Albertville they also hope to have a long term community relationship. “We’re sponsoring a candidate for Ms. Albertville and hope to continue working with local groups for fundraising as well as any catering needs that come up,” Lies said.
What’s their most popular meat so far?
“The peppercorn bourbon steak is the best grilling steak, and is also a great price,” Workman said.
“The snack sticks and jerky are also very popular, especially with the truck stop nearby,” Lies added.
