The Holiday Weekend is Over... What to Do with Leftover BBQ?

Now that the weekend has come to an end, continue enjoying your grilled favorites for many dinners.

Because of the beautiful weather this holiday weekend, many of you probably decided to grill.  What a perfect weekend to sit back, take the kiddie pools out, make some side salads and utilize those grilling utensils that have been safely stashed away for the winter.  Over the three day weekend, my leftovers consisted of Italian sausage, barbeque chicken, and marinated steak tips.  Oh the possibilities……

To start, I took the sausages and cut them into 1 inch circles.  On Sunday morning, I made sausage, egg and cheese sandwiches for my husband and I.  I put the sausage pieces in a sauté pan with a little olive oil and cooked them for a few minutes just to reheat them.  Then I whisked two eggs together with a little salt and pepper and poured that into the pan.  I layered some swiss cheese over the egg mixture and folded it over to make an omelet.  I cut the omelet in half and put in on two bulky rolls.   I served them with some cut up fruit.  What a hit that was!

There were some leftover barbeque chicken thighs and drumsticks.  At the end of the night, I took the meat off of the chicken bones and separated it into quart size freezer bags.  I ended up with four bags so I froze three and put one in the refrigerator to make BBQ chicken pizza one night this week.  I can also use the other leftover chicken to make chicken salad, chicken tacos, chicken stir fry, or chicken and rice casserole.  The possibilities are endless.

As for my steak tips, I froze those as well and plan on making steak fajitas, pepper steak burgers, and a steak bomb pizza (steak, cheese, peppers and onions) for future dinners.  Since the meat is already cooked, this will save me some prep work later.  I love BBQ’s but I also love all the possibilities there are for the leftover grilled meats.  There is nothing like that outdoor grill flavor to add some pizzazz to a mid week dinner.  Enjoy the fond memories of holiday get-togethers for many meals to come.
