Nutrition Notes: Taking Advantage of Fresh, Local Produce

Take advantage of Caldwell's local farmers market to create these healthy, wholesome and delicious smoothie recipes before the warm weather disappears!

Despite the fact that summertime is rapidly coming to an end, there is still time to grab some of this season’s  “gems” at the local farmers market. A wide variety of colorful produce is readily available at Caldwell’s weekly market. From red, plump tomatoes, juicy peaches, crisp lettuce, dark nutrient-rich greens and much more, I have inevitably become inspired to create and consume wholesome, healthy food.

The deep, vivid colors of the fruits and vegetables indicate that they are packed with vitamins and minerals. I am pleased and excited to be aware of these facts because I know I am giving my body what it deserves. I have come to the realization that what you eat can and will drastically change the way you feel and perform.

So naturally, with such an abundance of fresh produce I am destined to combine and test these foods in various different recipes. I like to start my day with something that I know will keep me hydrated and energized; therefore, I consistently resort to fruit and vegetable smoothies. They are delicious, keep you full, and can be eaten at any time of the day. (I usually eat mine for breakfast.) Here are some of my favorite recipes!

Green Machine

Ingredients:                Excellent Source of…

  • 3 Kale Leaves (Beta- carotene, vitamins A, B, C, E, iron and more…)
  • Handful of Spinach (In addition to or instead of the Kale) (iron, vitamins, and more…)
  • A handful of Blueberries (A great source of antioxidants)
  • A handful of Strawberries (Vitamin C, antioxidants and more…)
  •  3-4 Leaves Romaine  (Potassium, Beta –Carotene, Folic Acid and more…)
  • 1- 2 Bananas  (Potassium, Fiber, Vitamin A and more…)
  • Apple (Fiber, Vitamin C and more…)
  • Ice Cubes
  • Cup of Water (More or less can be added to suit your blender)

**BEST RESULTS IF FRUIT IS BLENDED WHEN FROZEN**

Peach Banana Smoothie

  • 2 Bananas: Frozen and Chopped (Potassium, Fiber, Vitamin A and more…)
  • 1 Peach (Calcium, Vitamin C, Potassium)
  • ½ cup unsweetened coconut milk (Potassium, Calcium and more…)
  • 2-3 pitted dates (Vitamin B, Potassium, Energy through natural sugar and more…)
  • Ice Cubes
