EDISON, NJ — A beloved New Jersey diner is set to soon be replaced by a new Indian restaurant.
House of Bombay will soon open in the space where the Menlo Park Diner used to be on Route 1 in Edison.
While an opening date for the restaurant has yet to be announced (“coming soon” is displayed on the cover of their website), a soft opening is set to take place later this month, according to a report from NJ.com.
On the restaurant’s Instagram page, House of Bombay promises to bring the heart of Bombay’s flavors to New Jersey, describing it as “different zip codes. Same soul.”
“Mumbai isn’t just a city, it’s a rhythm, a flavor and a feeling that stays with you, no matter how many miles you travel,” restaurant officials said.
“For the last eight months, we’ve been pouring that energy into a project that became our obsession,” they continued. “This wasn’t just about planning a menu or designing a space; it was about honoring the streets that raised us and bringing that soul to our new home in New Jersey.”
“We’re so close to opening our doors, and we can’t wait to finally share this labor of love with you. This is only the beginning.”
According to the report from NJ.com, husband-and-wife team Nishiket and Shizani Parikh plan to maintain the same level of hospitality as the Menlo Park Diner while introducing “elevated Indian food.”
The restaurant will initially be open for dinner from 5 p.m. to 11 p.m. and offer brunch on weekends, Parikh told NJ.com, though they plan to add lunch service at a later date.
News of the restaurant opening in the spot where the beloved diner used to be follows an announcement that the Edison Diner will soon be closing as well.
