New Vegan Restaurant Opens In Hillsborough

After 3 heart attacks, Sunil Fernandes changed his whole life and recently opened Papa Vegan in Hillsborough to help others focus on health.

HILLSBOROUGH, NJ — In 2019, Sunil Fernandes encountered some major challenges in his life when he suffered three heart attacks — one of them was massive.

"After that, I changed my whole life and focused on my health and life," said Fernandes of Somerset.

An extension of his newfound appreciation for a healthy lifestyle is the opening of his newest business, Papa Vegan at 438 Route 206 in Hillsborough.

Fernandes previously owned Shakes N Scoops at that location. However, due to his previous health issues, he lost that business and a car business as well.

At Papa Vegan, Fernandes is serving up his own creations.

"I create the recipes that I have been cooking for myself. Being a foodie along with a chef I came up with quite a few recipes. I mainly took popular recipes and cut out the salt content and substitute veggies for chicken," said Fernandes.

One of the few entirely vegan places around, Papa Vegan offers baked goods, appetizers, salads, entrees, fresh juices, burgers and wraps.

All of the baking is done on-premises and they also offer products such as a vegan brownie mix for customers to make at home.

"My focus now will be vegan. It is my passion," said Fernandes.
