NORTH JERSEY — Post-holiday blues got you down? Why not head to a New Jersey town or city you haven't checked out, and try a new restaurant? Or if you're heading into New York City, try dining in the Garden State before or after.

You'll be surprised by some of the innovative dishes. A new "timed sushi" experience opened in an intimate spot in Hoboken, and now there's sushi/Italian fusion in Montclair.

Sushi By Bou, W Hoboken Hotel

What's a "timed sushi experience"? Sushi By Bou has taken the East Coast by storm, popping up inside existing restaurants and hotels. They offer a small, cozy bar and lounge area to chat, and when it's your time, you head to the sushi counter and watch a chef prepare fresh cuts of fish. He arranges them, then passes them to you for an intimate timed experience. The special cocktails range from sweet to spicy, and you can hang out afterward (and try dessert). One location just opened in Hoboken's W Hotel in January. It's a cozy space, a great way to impress a date, and a walk of four blocks from the Hoboken train station and waterfront. Pasta Ramen: Japanese/Italian Fusion In Montclair

And not to be outdone, would you like to try Japanese/Italian fusion?

Pasta Ramen, a “pop-up, omakase-style” restaurant that combines Japanese and Italian dining, announced it would open to the public in late January in Montclair. It was offered by secret invitation before, but the secret's out! It scheduled its grand opening this weekend at 6 South Fullerton Ave. in Montclair. Find out more here.

Chick'nCone, Paramus

Chicken and waffles are two great tastes that taste great together. And there's a new, hotly anticipated joint where you can try chicken served inside a fresh waffle cone, as well as some Canjun sides. Try Chick'nCone in Paramus. More details are here.

Clove Garden, Garwood

Do your gastronomic tastes run closer to Indian food or gluten free? The new Clove Garden in Garwood offers provides plenty of vegetarian, gluten-free and vegan choices for customers. It's been open for about six weeks. Find out more here.

Bonvini Pizza, Livingston

Bonvini Pizza soft opened in fall — or really, opened again after closing more than 15 years go. Word has trickled out and now people are rediscovering the pies. They missed the tastes of this legendary restaurant, whose first incarnation opened way back in 1955! Family members decided to re-open it late last year. We didn't get to every new or relatively new restaurant, but there are several worth trying in Hudson and Bergen counties to be found among the 31 participants in Hudson Restaurant Week, running through Feb. 3.
