Madison Pizza Lab, Hoboken: Experimenting With Ingredients

The manager of the Madison Bar & Grill in Hoboken has been experimenting since last year with creating new pizza varieties. He finally opened his Madison Pizza Lab in September, within walking distance from the Hoboken Train Terminal. Kirshenbaum Baking Co., Westfield: Best Taylor Ham?

Kirshenbaum Baking Co. opened in downtown Westfield and quickly became known for its homemade cookies. But recently, on Facebook, Mayor Shelley Brindle praised its pork roll (or is it Taylor ham?) and egg sandwich. When Patch reporter Remy Samuels wrote a story about the sandwich, New Jerseyans followed up with contentious comments about whether to call it Taylor Ham (a name brand) or pork roll. Harvey's, Montclair: So Long, Corporate World
Matt Harvey gave up his corporate sales job to make hand-rolled bagels in Montclair, and they're generating a buzz. Among the varieties at Harvey's Bagels is "The Corner Store,” with crispy apple smoked bacon, fried eggs, cheddar, scallion cream cheese made in-house, and Good Times OG Mango Rojo Hot Sauce. Mamma Franca, Secaucus: Meals From Scratch, Near the Turnpike
Are you heading up the 'pike (or home from Manhattan) and want to try some Italian food from scratch? Mamma Franca, inside the Harmony Suites Hotel in Secaucus, is the place to be. Luigi Forte, who did name the place after his Mamma, said he wants to get to know his customers. "I want this to be an affordable place for everyone," he said. Mia Italian, Bridgewater: A New Venture
If you're too far west of Secaucus to try Mamma's, you can check out the latest endeavor from Bridgewater resident Abolfoyou Vergara, who has owned La Cascada in Manville since 2010. In September, he held a ribbon-cutting for his latest veture: Mia Italian Restaurant, off Route 202/206 in his hometown of Bridgewater.
