Hoboken Seafood Restaurant Opens, Will Have ‘Sustainable Cuisine’

A new seafood restaurant at the W Hoboken plans to bring "sustainable Northeastern coastal cuisine" to the Mile Square City.

HOBOKEN, NJ — A new seafood restaurant at the W Hoboken plans to bring “sustainable Northeastern coastal cuisine” to the Mile Square City.

The new eatery - Halifax – is a collaboration between owner Michael Barry and Executive Chef Seadon Shouse, according to a company news release.

The Halifax menu will feature farm and coastal cuisine from the Mid-Atlantic to New England and further north to Nova Scotia where Shouse grew up, and will serve “locally sourced meat, fish, produce and dairy” as well as Marine Stewardship Council Certified seafood, the company stated.

Shouse was one of the opening chefs at the award-winning Proof on Main in Louisville, Kentucky. He also served as Executive Chef at Glenmere Mansion in Chester, NY, named one of the “Top 40 Hotels for Food Lovers” by Bon Appétit Magazine. Most recently, Shouse was the Executive Chef of the renowned French seafood brasserie Millesime inside the Carlton Hotel in midtown New York.
