Elliot Malsky, a 10-year resident of Hoboken and a former sous chef at Carbone's in New York City, a restaurant that pays homage to the essence of the great Italian-American restaurants of mid-20th century in New York, continues to lend his culinary expertise to raise money for Healing the Children New Jersey (HTCNJ), a non-profit organization that provides medical care and services to children around the world.
