New Fine-Dining Italian Restaurant Opens In Livingston: Vette Ristorante at Calabria

LIVINGSTON, NJ — A new, fine-dining Italian restaurant has opened its doors in Livingston.

Nestled within the well-known Calabria restaurant building, Vette Ristorante attempts to “elevate the traditional trattoria” with its menu, wine pairings and the culinary vision of chef and sommelier Maurizio de Rosa, who brings more than 30 years of global gastronomic experience to the table.

The menu includes fresh pastas that align with Naples-inspired technique, seasonal preparations and carefully sourced Italian ingredients – including the wine list, spokespeople said:
“Vette Ristorante’s wine program reflects Chef de Rosa’s background as a certified sommelier and his deep passion for Italy’s diverse wine regions. The all-Italian wine list (with the exception of a select few champagnes) showcases varietals from across the country, from well-known names like Sauvignon Blanc to lesser-seen gems such as Timorasso, a rich and vibrant white from Piedmont. Among the reds, guests will find both classic Chianti and more distinctive selections like Cannonau from Sardinia. The reserve collection highlights prestigious producers, including Dal Forno Amarone and Sassicaia, offering guests the opportunity to explore Italy’s most celebrated vintages. With over 30 wines by the glass, each maintained at optimal temperature in the restaurant’s custom wine cave, guests are invited to discover new pairings throughout their meal. All wines are served in fine crystal stemware, and bottles of notable age are carefully decanted, underscoring the restaurant’s commitment to precision and hospitality.”
