Upscale NJ Restaurant Is Opening New Location In Livingston

Blu on the Hudson will be expanding to a new location in Livingston. Here's when the new restaurant is expected to open.

LIVINGSTON, NJ — A Weehawken restaurant that has become known for its “New York City” dining experience is opening a new location in Livingston, spokespeople say.

Blu on the Hudson will be expanding to a new location in early March at 277 Eisenhower Parkway in Livingston.

The new restaurant – Blu Livingston – will be led by Blu Hospitality Group’s owner, Michael Giannopoulos, alongside directors of operations Andrew Christianson and Karl Khambatta.

Here’s what to expect, spokespeople said:

  • Executive chef Juan Carlos “JC” Ortega will helm the kitchen, presenting a menu centered on “world-class seafood and premium steaks” and drawing inspiration from “the Mediterranean and beyond.”
  • Beverage director Jeremy LeBlanche will oversee the cocktail program, featuring “inventive drinks that replace fussy ingredients with theatrical presentations and unexpected garnishes.”
  • The wine program, curated by sommelier Adam Greer, will spotlight lesser-known producers offering “exceptional quality and value,” alongside respected legacy labels.

According to a social media post from last week, Blu Livingston is hiring and is doing open calls.
