MORRISTOWN, NJ — The grand opening of an ice cream shop in Morristown that sells highly customizable ice cream sandwiches made entirely from homemade ingredients has been postponed.

Stack Creamery, which first opened its doors in Westwood and also has a location in Jersey City, was scheduled to open at 48 Washington Street in Morristown during the week of July 4, but that date has been pushed back.

According to co-owner Mohamed Elnakib, Morristown inspections are backlogged, and as a result, Stack has yet to complete their final inspections.

"Unfortunately our soft opening will not happen this weekend and likely not the weekend after," Elnakib said. However, the grand opening should still take place before the end of this hot summer.

The shop will take the place of the former Postmark, and the company has been hard at work transforming the former coin dealer into its latest outpost, which includes building a full commercial kitchen.

Stack Creamery is best known for its high-quality ice cream sandwiches made from scratch using original recipe cookies and premium locally made ice cream.

The shop offers over a dozen cookie and ice cream flavors, as well as toppings to customize one's own version of the perfect ice cream sandwich. If ice cream sandwiches aren't your thing, they also serve cups, cones, and milkshakes as a traditional ice cream parlor.

The Morristown location will also feature extravagant creations such as their ice cream sandwich cake, which is 10 inches wide and weighs more than 7 pounds. It can feed up to 16 people and is completely customizable, according to Elnakib.

The Elnakib siblings are excited to bring their favorite childhood dessert to the growing and thriving Morristown community, but they do not yet have an exact opening date set. "I wish I had better news," Elnakib said.
