Why Is There So Much Talk About Gluten?
When I was growing up, I never even heard anyone mention gluten. Now, I hear about gluten almost every day.

Gluten is a protein that is made up of a glutenin and a gliadin molecule. When these two molecules are in the presence of water, they form an elastic bond.
Gluten is found primarily in wheat, rye and barley, but other grains may also contain a certain amount of gluten.
Celiac disease is a condition in which an individual has a severe gastrointestinal reaction to consuming gluten. People with celiac disease are placed on a strict gluten-free diet.

Then there are many different levels of gluten intolerance or sensitivity. It is my opinion that just about all humans could benefit by reducing or eliminating gluten from their diet.
When humans were hunters and gatherers, they pretty much ate a gluten free diet. Gluten consumption began with the onset of agriculture. But it never seemed to be a problem until recently.

The other factors that are increasing gluten intolerance and gluten sensitivities are:
1. Wheat hybridization, which produces wheat with a higher gluten content.
2. Adding toxic bromides to bleach flour.
3. Using the toxic and herbicide glyphosate (Roundup) to treat the fields as a desiccant to dry out the wheat prior to harvest. Glyphosate has been classified as a probable carcinogen by the World Health Organization, which is part of the United Nations.
4. The widespread consumption of GMOs.
5. The increase in the toxic chemicals in the human body. The average American has about 13 pounds of toxins entering their bodies per year. We eat, drink and breath in toxins. We also absorb toxins through our skin. The vast amount of these toxins are manmade and not found in nature. We therefore don't have any genetic predisposition to deal with them, since they are not found in nature.
6. The lack of biodiversity of gut bacteria. We should have between 20 - 30 thousand different species of microbes in our gut.
7. The poor diet that many people consume, lack many vital nutrients, are almost void of fresh produce and are full of processed foods, sugar and junk foods
This has produced a situation that has lead to much more gluten intolerance, as well as leaky gut syndrome.
What is Leaky Gut Syndrome?
I prefer to call leaky gut syndrome, "hyper-permeable gut syndrome". There are tight junctions in our digestive tract that are openings or pores that molecules can pass through to get into the bloodstream. When someone has leaky gut syndrome, these tight pores open up and are too big. The result is that larger molecules, which normally would never enter the bloodstream are entering the bloodstream. This leads to chronic inflammation, which is a hallmark of degenerative disease. Eventually, autoimmune diseases and even cancer can result.
What Can You Do?
1. The first thing to do is to eat more organic produce and other organic whole foods.
2. Make your meals from scratch.
3. Eliminate excess sugar, junk food and processed foods from your diet.
4. Eat fermented foods, such as kifer, kimchi and sauerkraut. this will help to seed your gut with beneficial microbes.
5. I recommend the supplement Restore. In my opinion, this supplement does an excellent job to help to heal the gut , increase the biodiversity of gut bacteria, as well as to improve the function of mitochondria, which are the powerhouse of the cell.
6. Drink plenty of fresh pure water.
7. Detoxify your body. For this, I recommend consulting with a healthcare practitioner that is proficient in detoxification protocols. Too many people can run into problems detoxifying on their own. If you detox too quickly, this can release toxins into your system that can cause problems. I would rather see a slow, mild and consistent detox over a longer period of time, which is much safer for the patient.
