Italian Restaurant In Bergen County Will Spin Off New Pizzeria Serving 'Pinsa'
A popular Italian restaurant in Bergen County will open a spinoff pizzeria with a twist.
RIDGEWOOD, NJ — The popular restaurant "From Scratch" in Ridgewood boasts fresh Italian dishes with a twist — from pesto pasta with French beans to a branzino filet with olives. Now they plan to open a second restaurant in town serving up a specific type of pizza.
"Pinsa Romana in pala," the posted simply, last month. "Coming soon to our new location! Stay tuned."
In November, they had given a prior hint, posting simply, "What is pinsa? A lighter, Roman-style evolution of pizza."

Roman pizza is a style of thin-crust pizza whose high-hydration dough makes it crispy. It's popular in Rome — hence the name — and central Italy, say foodies.
The social media handle for the new restaurant, called Pizza From By Scratch, began posting videos this week of creations they plan to serve, including white Italian cheeses, meatballs, and more.

The shop will open at 192 East Ridgewood Ave., approximately three blocks from its flagship at 44 East Ridgewood.
Patch reached out to the owners and was promised more details in the future. But chef Claudia Rovegno, who owns both restaurant locations, did tell the Record that customers should expect a "totally different kind of pizza."
