10 oz. of chicken breast
32 oz. of chicken broth
1 oz. yellow onion – Minced
1 oz. celery – Minced
2 oz. mayonnaise
1.5 oz. franks red hot sauce
4.5 oz. Panko bread crumbs
1 oz. ranch dressing
½ egg yolk
4 oz. cooking oil
Garnish:
1 oz. Blue cheese dressing
1 oz. Julianne carrots
1 oz. Franks hot sauce
Bring 32 oz. of chicken broth to a boil, add chicken breast and lower the heat to a simmer. Cook the chicken until the thickest part of the chicken reaches 165 degrees and the meat is very tender (you should be able to pull apart easily).
Remove the chicken from the stock and allow to cool in the refrigerator for about 15 minutes. Now pull the chicken meat apart with your hands till you have fine shreds and return to the refrigerator to reach below 41 degrees.
Place the cooled chicken in a bowl with the onion, celery, mayonnaise, franks hot sauce, ranch, egg and 1.5 oz. of the Panko. Mix gently with a spoon until homogenous.
Place the remaining panko in a bowl. Scoop 1 oz. balls of filling into the panko and coat with breadcrumbs and shape into patties.
Fry the patties in 350-degree oil until golden brown on both sides. Transfer to a sheet pan and bake in a 350-degree oven until the internal temperature reaches 165 degrees F.
Garnish with Julianne carrots, Blue cheese dressing and franks red hot sauce.
