"That was an amazing experience as I am a big fan of the show," Albanese said. "I always enjoy doing the high-profile cakes and events. They are the most work and the most pressure, but they biggest rush and the biggest accomplishment."

Albanese grew up in Hillsdale and went to Pascack Valley High School. He went to college for art, but as things went digital, he had a difficult time finding work.
Albanese would watch shows like "Ace of Cakes," on the Food Network and that's where he got the idea to be an artist with the scrumptious side of life.
"I would see these amazing artistic cakes and thought 'Hey, I could do that'," Albanese said.
He is now enrolled in Institute of Culinary Education's pastry program in New York City. He is also the region's head cake decorator for Whole Foods.
"I wanted the opposite of a family business, but I soon recognized that corporate America was not my thing either," Albanese said.
Now, he runs his own business called "The Pastryarch" and headlines events like "The Chocolate Expo" that travels to different venues, including The Meadowlands.
"I do everything — from the shopping to the mixing to the cleaning and I love it that way," Albanese said.
