Quick Quiche is Perfect for Lunch Guests

Elegant dish is delicious and nutririous -- and easy to prepare

My lunch guests were due to arrive in a few hours but I didn’t feel like serving sandwiches. Besides, I knew the girls would prefer something a little more nutritious than cold cuts and rolls.

I decided instead to make a quiche, serve it with fresh fruit and a salad – both of which I always have on hand.

What a success! This quiche recipe is not only delicious, but is quick to prepare and takes about an hour from start to finish. I like to use a combination of cheeses – in this case, I mixed American, Swiss and
cheddar mainly because that’s what I had in the frig. But the flavors
complement one another and add a creaminess to the finished product. Serves 6 or 8.

WHAT YOU’LL NEED

1 unbaked pie shell (the refrigerated brands work well and save the trouble of rolling out dough)

3 eggs

1-1/4 cup milk (I use 1% or skim)

Dash of salt and pepper (sprinkle of red pepper flakes, if desired)

1-1/2 cup shredded or chopped cheese

2 tbs. flour or baking mix

½ cup steamed spinach (or broccoli, chopped)

HOW TO PREPARE

Preheat oven to 350. Combine eggs, milk, seasonings; mix
well. Toss cheese with flour. Add cheese mixture to egg mixture. Stir in spinach. Pour into pie shell. Bake for 40-45 minutes. Let stand for 10 minutes before serving.

OPTIONS

Be creative: add sliced tomatoes, canned mushroom pieces, chopped broccoli, diced ham or sprinkle with grated cheese. Anything goes!
