Simple Sausage, Pepper and Onion Sandwich
This staple of the boardwalk and carnivals can be easily made, right at home
There’s something about the combination of sausage, peppers and onions that we Americans just love. So much so that they are part of almost every buffet and they are sold in sandwiches at carnivals, feasts and amusement parks. With some simple ingredients you, too, can make delicious grilled sausage, pepper and onion sandwiches.
Your ingredients are ten Italian sausage links, one Vidalia onion, one red, green and yellow pepper, olive oil, fresh basil, garlic, balsamic vinegar, salt, pepper and Portuguese rolls.
Fill a pot with water and boil. Carefully drop the sausage in the boiling water and par cook till they are grayish white color on the outside. This will aid them to cook faster without burning on the open flames. Remove immediately from the water.

Head outside with a grilling basket prepared with non stick spray and turn the grill on high. Set the basket on the rack and let it heat up.
Back in the kitchen, slice the onion and peppers into strips and place in a bowl. Add two tablespoons of snipped basil, three minced cloves of garlic, salt and pepper. Drizzle ¾ cup olive oil and ¼ tablespoon of balsamic vinegar and toss.

To the grill we go.
Place your peppers and onions in the basket and stir. Continue to toss them for approximately 15 minutes. While they are cooking, brown the sausages. Remove everything from the grill.
To build your sandwich, start with a hollowed out roll, add some spicy horseradish sauce if you like, continue with the sausage and a generous amount of peppers and onions. Serve with a side of *warm pesto pasta and vegetable of your choice.
Who needs a carnival? You can make your own sausage, pepper and onion sandwich and bring the feast to your house.
