What's in a Dietitian's Pantry this week?

We asked NWH Registered Dietitians to help us stock our kitchen with foods that make it easier to prepare healthy meals.  NWH Registered Dietitian Kimberly Stein RD, CDN shares her list of 5 favorite staples in her pantry. Kimberly is a busy graduate student and likes to focus on quick and easy meals when she’s on-the-go.

1.    Whole Wheat Panko Breadcrumbs

I like to substitute regular breadcrumbs for Panko when breading chicken or fish for extra crunch.  I opt for the whole-wheat variety so I know it still retains some fiber and nutrients.

2.    Dried Herbs

Experimenting with different herbs is a fun way to “spice” up meals. The dried variety keeps longer than fresh, so a little bit goes a long way! My two favorites are thyme and oregano.

3.    Whole Grain Couscous

This is one of the simplest grains to cook so I like to make extra to have for leftovers throughout the week. Couscous pairs well with almost anything so it’s a very convenient side dish.

4.    Garlic

I’m a fan of everything garlic and love cooking with it. Before I sauté, I like to heat the oil with some minced garlic and red pepper flakes to really infuse the flavor.

5.    Dried Apricot

This is a really quick snack for on the go. One serving, which is five apricots, is only 90 calories. I make sure only to have one serving so I don’t overdo it with the sugar!
