
Potato pancakes are one of my family’s favorite dishes, but if you do not want to go to the trouble of grating potatoes and onions, here is another favorite that is so simple, even a child can make it.
It’s tasty and delicious and best of all it’s easy. This is a great side dish for Passover or any other time of the year. Try it, you’ll love it. If you don’t try it, you will never know what a delight you have missed.
Ingredients

- ½ cup matzo meal (if you are using it for Passover, make sure the label says okay for Passover use)
- 2 eggs
- ½ cup water or club soda
- ½ tsp. salt
- ½ tsp. sugar (optional)
- Vegetable oil (for a larger crowd double the ingredients)
Directions
- Beat eggs
- Mix with water, salt, sugar and matzo meal.
- If the mixture is too loose, add more matzo meal if needed.
- Heat oil to cover bottom of the frying pan.
- Drop a teaspoonful of the mixture into the oil all around the pan.
- Lightly brown on both sides.
- Serve with jelly, jam sugar or salt. (My meshuggeneh husband eats them with ketchup!)
