Fruits and vegetables that are darker in color – such as dark-colored grapes – have more antioxidants than their lighter-colored counterparts.
“They’re finding that if you char meat, if you grill it or sear it and it develops that brown coating, that could potentially be a carcinogen,” said Stephanie Schiff, RD, registered dietitian at Huntington Hospital. “So to lower that risk, it’s better to cook meat in a moist environment, so you can braise it or you can boil it like in chicken soup. You can make a brisket in the oven and put sauce on it. Something where you don’t get that char, that crust.”

There have also been studies that excess salt in a person’s diet increases their risk of colorectal cancer, Ms. Schiff said.
Ms. Schiff has been offering these tips and others in a nutritional seminar held at the hospital.
