Farmer's Market Finds Yields Fresh Food Fast

Fresh tuna from the market plus a few ingredients nets a quick and healthy meal.

This past Sunday at the Kings Park Farmer's Market, I picked up some fresh tuna from Paul's Seafood and a whole wheat baguette from the Blue Duck Bakery.

When I arrived home, I checked to see what I had in the garden and picked a juicy tomato, a handful of basil, cilantro, and a jalapeno.  I had no choice but to go to a supermarket and purchase limes, avocado, onion and mango.  I then prepared this very simple recipe. Here are the ingredients:

Tuna (1/2 lb)
1 mango
1/2 avocado
1 small red onion
2 limes
cilantro
1/2 jalapeno
salt & pepper.

Cut the tuna, mango, and avocado into small uniform chunks.  Slice the onion and jalapeno as thin as possible.  Squeeze in the juice of 2 limes. Add all of the ingredients in a non-reactive bowl and gently toss. Divide into 2 portions and enjoy!
