Healthy Cooking With Pasta and a Creamy Sauce? You Bet

Yes you can have something this delicious and healthy.

I am starting to love cooking. I have always been more of a baker than a cook. The challenge I find with cooking is making delicious dishes that are healthy. When baking, I am all for "full fat" but when it comes to cooking I preferring healthier options.

Here is one of my favorite healthy pasta dishes- a spinoff to a dish my mom used to make.

• Barilla Plus Thin Spaghetti

• 4-6 Garlic Cloves

• 4 tbsp Extra Virgin Olive Oil

• 2 tbsp Butter

• 1 Package Frozen Chopped Spinach (semi defrosted)

• 16 oz of 2% Cottage Cheese

• Fresh Ground Black Pepper

• Grated Locatelli Romano Cheese

Place oil and butter in a sauté pan and set to medium heat. Fill a big pot with water and set to bring to a boil and cook the pasta as directed. As these pots are heating up, finely chop the garlic cloves, add them to the oil and butter, and sauté for about 4 minutes. Then add the package of spinach and sprinkle with fresh ground black pepper and salt to taste. Cook for another 2 minutes. Then stir in the cottage cheese. When the cottage cheese is all combined take about a half of cup of the starch water from the boiling pasta water and add to the spinach mixture and cook for about 2 minutes.

Drain the pasta and place it back in the pot. Add the spinach mixture to the pasta pot and stir together and cover for 3 minutes so the sauce seeps into the pasta. Serve topped with some grated locatelli romano cheese.
