In Season Blueberries Make for Great Muffins
Some ricotta cheese make these muffins healthy and delicious.
Healthy Ricotta Cheese Blueberry Muffins
Ingredients:
2 cups cake flour
1/2 tsp baking soda
1/2 cup butter
3/4 cup sugar
1 egg
2 egg whites
1 cup part-skim ricotta cheese
1 tbsp vanilla
1 pint blueberries
confections sugar (optional)
Directions:
Preheat oven to 350°.
In a medium bowl mix flour and baking soda, set aside. With a mixer Cream together butter and sugar, for about 3 minutes until light and fluffy. Add the ricotta cheese and vanilla. Lightly beat egg and egg whites and add to the mixture. Slowly incorporate the flour mixture, in 2 parts until all blended. Fold in Blueberries. Fill lined muffin tins 3/4 of the way and bake 15-18 minutes.
Serve warm and sprinkle with confections sugar.
