When being faced with a life-altering change, you must remain open-minded. There is always something you have not tried, especially a new dietary lifestyle.
When I was a child, I would never drink anything else besides whole milk. If milk wasn’t available, I would not drink anything at all. Needless to say, I was a very stubborn child, but in my mind I knew what I liked and that was it!
As we all grow up we learn to try new things — broccoli is not evil and not all health food tastes like tree bark. If you don’t like something, at least now you know!
From my years of experience in the food industry, I have noticed that coconut is one food that has some debate:
- Is it savory?
- Is it sweet?
- How do I use it?
- Where do I use it?
- Is it only good in tropical alcoholic drinks?

With all the health benefits of coconut for intestinal troubles, I have come up with an enjoyable recipe for you on those hot summer days!
Coconut Herb Salad
(serves 1)

Ingredients:
- 5 frozen shrimp – thawed, cleaned, rough chopped
- 2 medium-sized carrots (shredded)
- 1 cup mixed greens
- 1/4 cup fresh parsley (chopped)
- 3 tablespoons coconut flakes
- 2 tablespoons fresh chopped basil
- 1/2 avocado (sliced)
Note: Shrimp can be replaced by grilled chicken. Remember, red meat is not easily broken down by the digestive system.
Coconut Oil & Macadamia Nut Salad Dressing
- 1 tablespoon coconut oil
- 2 tablespoons Macadamia nuts
- 1 tablespoon red wine vinegar
- 1 clove grated garlic
- 2 teaspoon honey
- Other seasonings of your choice
Procedure:
- In stainless steel skillet, heat coconut oil on medium/high until melted and hot.
- Add nuts and saute at medium-high heat until golden brown.
- Turn off heat and remove from burner; add remaining ingredients and whisk.
- In a salad bowl, mix herbs and greens.
- Top with carrots, avocado, shrimp and coconut flakes.
- Toss with dressing & enjoy!
