Chip City, 'Fun, Playful' Items, Opens Newest Location In Merrick
The store rotates six cookie flavors weekly.
MERRICK, NY — Who doesn't enjoy chocolate chip cookies? Theodore Gailas is certainly banking on the answer being "everyone."
Gailas is the co-founder and chief brand officer of cookie specialty shop Chip City. He rotates six flavors each week.
His 20th location opened earlier this month in Merrick. Chip City shops have been popping up across Nassau in Oceanside and Garden City. Next month, the treats will be available in East Northport and North Babylon.

Gailas, who hails from Queens, got into the cookie world from the restaurant industry. His business partner comes from a construction background.
Gailas began to notice a shift to niche dining.

"To be known for something, you have to do one thing and do it really well," Gailas told Patch.
So, it was decided to take the career splash with cookies. On the day, Patch visited the Merrick location. On display were items such as: Cookies N' Cream, Frootie Crunch, cookies mixed with Fruity Pebbles-type of cereal -- and Blueberry Cheesecake, which has a filling. One weekly option is always plant-based.
"We try to keep it fun and playful, both in our branding and our products," he said.
Gailas is active in the new flavor tasting and decision-making. They keep an eye on social media to see what cookies are a hit with the masses.
Chip City has collaborated with Swiss Miss and Orville Redenbacher for unique cookies. Additionally, customers can now get ice cream with their cookie orders for their version of a "Pie a la Mode."
Part of the Chip City secret is keeping the cookies warm until purchase with heat lamps.
It started for Gailas in 2017 with his first Chip City in Queens, but in choosing Merrick for the latest location, "This was one of the key neighborhoods that we really liked," he said.
Since debuting the Merrick Road shop, customers "have been very kind to us," Gailas said.
While the initial response came from their social media presence, word of mouth has lifted Chip City's popularity.
"We're able to see that successfully in just the couple of weeks that we're open here," he said.
He proudly pointed out Opening Day lines circled the block.
"We couldn't even find a parking spot in the lot," Gailas laughed.
For those who aren't in the vicinity or can't get to the store, there are local (UberEats) and national (Goldbelly) delivery options.
"But for me, nothing beats the best way to just come on in and grab a nice hot cookie," he said.
