What’s Inside: Branzino is a European fish, appreciated by both fish lovers and those who don’t want an overly fishy taste. In Italy it is called Mediterranean sea bass (in France, loup de mer). It is a flaky white meat fish with a mild, uncomplicated flavor. At Circa the branzino filets are pan seared with gremalato, a condiment of finely minced parsley, garlic and lemon zest. Extra virgin olive oil is drizzled on the plate.
