On a (Cranberry Walnut) Roll
Frank Cardinali bakes a variety of breads daily – here's one of them.
Upon entering Freshway Market, follow the aroma of fresh baked bread and chances are you’ll see the genial Frank Cardinali shaping dough into rolls or pulling loaves of bread from the ovens. The original owner of Cardinali's Bakery in Carle Place, Frank sold his business 14 years ago only to come out of retirement to once again roll out the dough.
Boasting 73 different bread recipes to draw from each day, Cardinali bakes from 27 to 32 different varieties for customers’ taste buds to enjoy.
The Dish: Cranberry Walnut Rolls (75 cents each). This is also available as a round loaf ($3.99).

What’s Inside: this large roll, made of French bread dough, is teeming not only with cranberries and walnuts, but also contains hazelnuts as well as black and golden raisins.
How’s It Taste: the dough is aromatic with just the right amount of sweetness. Every bite contains berries and nuts. I love this with lots of sweet butter. Frank also recommends it toasted with butter.

Sides: Frank thinks the roll goes well with cappuccino. I enjoy it as well with a cup of strong black coffee. He finds it a good accompaniment to turkey – the bit of tartness from the cranberry creates a good balance.
