Squash Soup and Salad at Fresco Crêperie
Fresco Crêperie is more than a crepe restaurant – their soups and salads are also worth the trip.
Regulars at the relatively new Fresco Crêperie in Williston Park are catching on to what those at the Long Beach branch have known for a while – the soups are a meal unto themselves and the salads are very satisfying.
Co-owner Steve Guasco says that when customers find out when the seasonal squash soup is coming onto the menu, they order it in advance so they can be sure to have it.
The Dish: Squash Soup and Blue Cheese and Chicken Salad

What’s in It: The squash soup is served with crushed goat cheese on top while the blue cheese and chicken salad is a mountain of a salad – greens are packed through with shredded chicken breast, Danish blue cheese, walnuts and diced Granny Smith apples and held together with the house vinaigrette.
How’s it Taste: The soup is creamy with a sweetness that comes from the squash itself. Spices such as a touch of cinnamon add a nice aroma and taste. Nearly every bite of the salad has chicken, blue cheese, walnuts or apple. There is no stinting on ingredients.
