The Dish: Cavatelli Paolino

A flavorful pasta dish at Gino's Trattoria.

What’s Inside: This dish, named for owner Joe DePaulis’ nephew Paolino, combines homemade cavatelli pasta and homemade pork sausage that is ground and braised with white cannelloni beans and broccoli rabe in a light sauce of white wine, garlic and oil, spiced to taste.  

How’s It Taste: This is the kind of full-flavored dish that you can just keep eating and enjoying, wanting to come back for more another day.  The ingredients are fresh and the variety of flavors and textures work well together, from the smooth pasta to the earthy sausage to the creamy beans and the somewhat bitter broccoli rabe.  

Sides: Joe DePaulis recommends Verdicchio, an Italian white wine that offers a crisp clean flavor to contrast with the sweet Chablis that is used in the sauce.
