Spinach has been a star of the dinner plate from New York to Hong Kong for centuries. It most likely came from Persia but was first widely grown as a farm crop in Asia. Catherine de Medici, who was queen of France in the mid-1500s, was such a fan of the vegetable that the French started calling dishes with spinach "Florentine" in honor of the Queen's Italian origins. Spinach ties up lots of nutrients, including iron, in a neat little package. It's also easy to cook, so toss a handful into eggs, soups, stews, stir fries or even raw into salads. This cool loving plant is hitting its peak season now as we head into spring. We're not sure who got to decide this, but Sunday is National Spinach Day, so pick up a bunch at this weekend's farmers market to celebrate.
