Two New Vendors Warm Ossining's Winter Farmers Market

Support small farmers, businesses and markets - and as soon as you get home, brew some Ancestral Coffee and toast a DoughCo bagel.

OSSINING, NY — They say home is where the heart is, and two new vendors at the Ossining Farmers Market are proving that in their own ways — Ancestral Coffees, based in Harrison, and DoughCo bagels, baked in Croton-on-Hudson.

Ancestral Coffees roasts and sells beans imported from small farms in a remote mountainous region of South America.

For Gabriel Paz and Angela Guerrero, Ancestral Coffees is an apt name. "It was Angela’s idea," Paz told Patch. "It’s a family business and it represents our background, and it’s a cool name, too."

They source the beans mostly from Risaralda, Colombia with the help of family members. It helps the farmers and provides Paz and Guerrero's customers with out-of-the-ordinary coffee.

The beans are exported in small batches and roasted in Westchester the day before they’re sold.
“It’s a fresh coffee you won’t get anywhere else,” Paz said.

Ancestral Coffee sells three levels of roast: medium, medium dark and dark. The coffee has notes of nut, caramel and fruit, he said. They’re selling fresh-roasted beans at the Ossining Farmers Market now and hope to have a permit soon to brew and sell coffee by the cup.

Josh Small grew up in Chappaqua originally, and though he lives on the Upper West Side, he makes his bagels in a kitchen incubator in Croton-on-Hudson.

"I always enjoyed cooking and baking growing up with a big family, but my interest in bagel-making first started during undergrad at Carleton College in Northfield, Minnesota," he told Patch. "My interest increased as I noticed an overall lack of bagel options in the Midwest as I played college baseball all over the region. Then I attended U Chicago for a master's in international relations and was shocked that bagels did not exist there."

He began experimenting with bagel recipes there, and kept on doing it after he graduated, moved back to New York, and began working in venture capital.

"I discovered by milling local malt by hand, the bagels locked in their flavor and stayed fresher," he said. "The hand milled malt is one of the main differentiators of my bagels! After experimenting for over a year and bringing lots of bagels to my soccer games for my friends to taste test, I reached what the product is today. DoughCo Bagels was then launched in the summer of 2022 and began selling in September of 2022."

DoughCo offers pop-ups at breweries in Brooklyn and Long Island City and sells at farmer's markets including Chappaqua, Hastings, Irvington, Pelham, New York Botanical Garden, and now Ossining and Park Slope. They also do deliveries in Westchester.

DoughCo offers six main types of bagels — plain, sesame, poppy, everything, salt, and onion — plus rotating specials, such as rosemary salt.

"We also offer four different main cream cheese types: plain, scallion, cilantro jalapeño, and honey walnut. We are experimenting with different cream cheese types as well," he said.

At farmer's markets, they also sell bagels and cream cheese sandwiches.

Go get some! The Ossining Farmers Market is open from 8:30 a.m. to 1 p.m. Saturdays, in the parking lot near the corner of Main and Spring streets.
