August 12th is Julienne Fries Day.  How about cooking up a batch of homemade Julienne Fries to celebrate?!  Serve alongside a nice juicy burger or a nice piece of fish. 

INGREDIENTS

4 Medium Baking Potatoes (1 1/2 Pounds)

Peel the potatoes.  To prevent darkening immerse the peeled potatoes in a bowl of ice water until ready to cut.  Cut the potatoes lengthwise into 3/8 inch wide strips.  Return the potatoes to the ice water.  In a heavy deep 3 quart saucepan or fryer, heat the vegetable oil to 365° F.  To prevent splattering pat the potatoes dry.  Using a spoon, carefully add the potatoes, a few at a time, to the hot oil.  Fry for 5 to 6 minutes or until crisp and golden brown, turning once.  Meanwhile, preheat your oven to 300° F.  Using a slotted spoon, carefully remove the fries from the hot oil and drain on paper towels.  Sprinkle with kosher salt.  Place parchment paper onto a baking sheet. Put the cooked fries onto the baking sheet and place into the oven to keep warm while you are frying the remaining potatoes.  Serves 4
