Hudson Valley Hospital Center is offering more healthful options and specials in the cafeteria on Mondays as the Food and Nutrition Department supports a national initiative called “Meatless Monday.”
“Meatless Monday” is a campaign started at Johns Hopkins University in an effort to reduce the risk of chronic diseases, save natural resources and reduce our carbon footprint. Why should you go meatless once a week?
