Eating...Veggie-Style

Summertime means fresh fruits and vegetables are more abundant and this just gets better as the season progresses. Adding fresh fruits and veggies is a great way to eat healthy, maintain or reduce your weight, and add variety to your meals.

I’ve been a vegetarian for years. My wife is terrific as she prepares meals for the family and I’m the only vegetarian. Hey, I’m not advocating being a vegetarian, this is what works for me. See what the experts are saying...

  • Limit added sugars and sugary drinks, refined grains (white bread), and large amounts of saturated and trans fats. Healthy diets should include substantial amounts of fruits and vegetables, whole grains, legumes, and nuts

  • Dr Dean Ornish (Preventive Medicine Research Institute, Sausalito, CA), “aim to eat little to no red meat, more vegetables, fruits, whole grains, legumes, and soy and fewer simple and refined carbohydrates, and more healthy fatty acids (olive oil, fish)”. Such a diet would go a long way toward treating the health crisis in the US, as well as reducing global warming and energy consumption. "At a time when 20% of people in the US go to bed hungry each night and almost 50% of the world's population is malnourished, choosing to eat more plant-based foods and less red meat is better for all of us—ourselves, our loved ones, and our planet,"..."In short, don't have a cow!"

    1. Don’t think good food vs. bad food. Your overall diet is important

    2. Eat in moderation and have a lot of variety, think whole foods vs. processed

  • Limit red meat to no more than three times per week

  • Reduce or eliminate processed foods. This reduces salt (sodium) too which could be important if you have high blood pressure or risk of stroke

  • Substitute water, unsweetened tea or coffee for sugary drinks

  • It’s too expensive to eat healthy!

    Au contraire! Check out the ABC news story on “Papa Joe” - the 99 Cent Diet Guy. While there aren’t any 99 Cents Stores here on the east coast, eating healthy is doable, even on a budget.

    Part of my training as a student and teacher of Taekwondo is to take care of my body, mind, and spirit. Make sure you fit in enough moderate activity in your daily life, eat whole foods, and get fit AND be healthy.
