Brown sugar, soy sauce bacon and fresh asparagus BAKED what a mess! It seemed a great way to ruin fresh
asparagus. To date I must have made this
at least fifteen times and every time I say I could eat the whole plate. I
thought the asparagus would turn out overcooked and mushy but instead it keeps its
shape and fresh taste just perfectly.
The crisp salty bacon combined with the brown sugar sauce is a wonderful
taste explosion. I do use precooked
bacon because I found uncooked bacon was not crisping up enough during the
cooing time.

2-Pounds fresh asparagus ends trimmed
12-slices of precooked bacon
1/2-cup light or dark brown sugar
1-stick butter
1-Tablespoon soy sauce
1/2-teaspoon garlic salt
1/2-teaspoon ground pepper
Preheat oven to 400º
Divide asparagus into bundles of three or four stalks and wrap a precooked bacon slice around the bundle securing with a tooth pick.
Put bundles in a single layer in a low casserole dish.
Mix brown sugar, butter, soy, garlic salt and pepper in a small sauce pan. Bring the mixture to a boil. Pour the hot mixture over the bundles and bake for 25 minutes or until bacon has crisped.
Serves 6 and doubles easily.
