
“Piece of Cake” By Pat O’Keefe Here is a little something for your sweet tooth. I love this recipe! It has a delightful cooling consistency. It is fast, easy, so refreshing and you don’t need an ice cream maker. Actually you can make any ice cream recipe without an ice cream maker using this same method with only a slight difference in texture. The recipe originally called for lemons but I find it suits my taste better with limes—you take your pick! LEMON OR LIME ICE CREAM 1-Cup granulated sugar 7-Tablespoons fresh lemon OR lime juice 2-Cups half and half 2-teaspoons lemon OR lime zest Pour the half and half into a something metal, if you have it, like a mixing bowl or anything that will fit into your freezer. Obviously the mixture will freeze faster if the container is lower and wider. Mix the sugar together with the lemon OR lime juice until it is well combined. Add this mixture along with the zest to the half and half mixing well. If you would like a little more color add a drop or two of yellow or green food coloring depending on whether you used lemons or limes. Place the container in your freezer (uncovered) and continue to stir well at intervals. I do this after about 40 minutes and then again 40 minutes later. Use a fork to crush any lumps. Once the mixture reaches the consistency of soft ice cream, transfer to a plastic container and cover tightly. Remove from the freezer 5 minutes before serving. Enjoy plain or top with a few blueberries and a sprig of fresh mint (from your garden of course!)
