
“A Piece of Cake” By Pat O’Keefe There is nothing like home-made baked goods. I know in this past-paced world baking your own biscuits is the last thing on a busy person’s list. Mostly, all home-baked goods freeze beautifully so you can heat them up in a flash. I guess I am just trying to convince you to try another one of my biscuit recipes. I have been using this recipe for years and just recently added chopped pecans bringing the biscuits to another level. You will bring out the exceptional flavor of any nuts if you roast them first. I usually crisp mine on a baking sheet while the oven is preheating. Oatmeal Biscuits 1-cup quick cooking oats 3 and 1/2-cups all-purpose flour 1/3-cup packed brown sugar 4-teaspoons baking powder 1 and 1/2-teaspoons salt 1/2-teaspoon baking soda 1/2-cup butter, room temperature 1 and 1/2-cups pecans, roasted and finely chopped 1 and 1/2-cups buttermilk 1-teaspoon real vanilla, mixed in buttermilk Preheat oven to 450º. In a large bowl mix oats, flour, brown sugar, baking powder, salt, soda and chopped nuts until well combined. Cut in butter until mixture resembles coarse crumbs. Mix vanilla into buttermilk and add to flour mixture stirring until mixture just comes together. Turn out onto floured surface and flatten or roll into a circle approximately 1/2 inch thick. Cut with floured cutter of your choice. I use a 3-inch fluted round cutter. Place biscuits 1 inch apart on ungreased cookie sheet. Bake for 12-15 minutes until golden brown. Cool on wire rack, makes about 18 biscuits depending on the size of your biscuit cutter.
