Fall is great time of year, crisp air, beautiful scenary and gardens to harvest! Check out some delicious AND guilt-free fall recipes!

With the fall season comes a host of new fall vegetables to try. Below are two of my favorite, easy, guilt-free side dishes.
Butternut Squash Fries-These fries are even more tasty than your traditional french fry!
Pre Heat oven to 425

Cut off the ends of a medium size butternut squash and peel. Hint: If you put the squash in the microwave for 1-1/2 minutes, its easier to work with once it cools!
Cut squash into French Fry shapes and place on a baking sheet sprayed with olive oil.

Sprinkle seasonings of your choice, chili powder is a favorite of mine, not to spicy and goes great with the sweetness of the squash!
Shake pan to coat fries and bake for about 35-40 depending on thickness and amount of "fries"
Flip fries 1/2 way through cooking.
They are done when they start to brown and get crispy. Enjoy as a side dish to virtually any main dish!
Cauliflower "Mashed Potatoes" You won't have the carb guilt or carb crash!
Fill a large pot with an inch or two of water, place steamer insert inside and bring to a boil.
Trim a large head of cauliflower into florets and steam until tender. As a garlic fan, I also put in several cloves of garlic (optional)
Once florets are tender, place in colander to drain.
Now, you can mash them manually if you like your mashed potatoes chunky or puree them in a blender to your desired texture.
Season with salt and pepper to your preference. A warm, cozy and healthy side dish!
