Four Fall Menus Debut at Equus in The Castle Hotel & Spa in Tarrytown

Seafood is abundant on the French-inspired menus.

Equus at The Castle Hotel & Spa in Tarrytown introduced four fall, 2015 menus on Monday, September 21, 2015. Seafood is abundant on the French-inspired menus and includes several unusual and imaginative dishes.

Two of the menus are “à la carte” (lunch and dinner) and two are prix-fixe menus (a five-course, $85 prix-fixe dinner meal and a three-course, $58 Sunday brunch menu). Tax and gratuity are additional.

The “a la carte” lunch menu has salads priced at $14 and up and pear soup accompanied by smoked foie gras, chestnut and maple syrup ($15). Luncheon entrées include wrapped mushroom risotto ($19), grilled swordfish ($23) and a Wagyu beef burger ($26).

Other lunch seafood choices: crab cake Benedict; grilled octopus with Halloumi cheese, artichoke and honey mint sauce; lobster BLT with bacon, chopped romaine lettuce and tomato accompanied by rouille mayonnaise on brioche; salmon with green cabbage sauce; swordfish; and tuna tartare.

Lunch “land” dishes include Long Island duck ($25).

New dinner menu

The “a la carte” dinner menu has appetizers starting at $15 and entrées ranging from $27 to $39.

The dinner menu offers octopus as an appetizer prepared four different ways — tempura, grilled, burgundy style, and red wine stewed ($18).

Scallops and grouper appear on the dinner menu as appetizers and as a main course, a distinctive ”oil bath swordfish” (a blending of bok choy, Tomatillo jam, and black bean Diable sauce). Roasted lobster with leek pudding and jumbo shrimp with blue cheese orange sauce round out the seafood on the dinner menu.

“Land” dinner dishes include grilled lamb rack with smoked eggplant puree, fried pappardelle, and natural lamb jus available a la carte at dinner ($35) and also on the five-course prix-fixe menu. Other land dishes include brined Hemlock Hilll chicken ($29) and grilled Niman Ranch pork chop ($32).
