
Samosas, Squash and other Savory Stuff
The Samosa Shack will be joining the Phelps Farmer's Market at the Park, serving up crispy samosas with fillings like sweet potato and ginger and kale and smashed potato, or the classic green peas and masala potatoes variation to which chef Mini Dhingra adds green chilies and cilantro. This week she is also bringing Bhelpuri, a savory Indian snack made with puffed rice, vegetables and a tangy tamarind sauce. A snack with almost iconic status in India, it is low-fat, nutritious and delicious!Also look for beautiful squash, cauliflower and fingerling potatoes from DoReMe Farms of Black Dirt Country. Here's a quick and easy fall dinner or side dish: steam some peeled quartered potatoes with cauliflower florets. When cooked, mash together in a bowl with a tablespoon of Dijon mustard, some olive oil or butter, ground Fleur de Sel salt from Spice Revolution and coarsely-ground pepper. Mash to desired consistency, then add fresh herbs of your choice and top with a dollop of Sohha yogurt.
