Owner and founder Ben LeBlanc started Good Stock in Smorgasburg in 2014, inspired by food (particularly gumbo) he grew up around in Houma, Louisiana, the website states.

LeBlanc started the business as a solo project and had a biweekly lunchtime kiosk at the West Elm in Dumbo. LeBlanc then paired up with chef David Santos, formerly of Louro in the West Village.

The duo started to sell their soups in the Urbanspace Vanderbilt food hall near Grand Central Terminal, and offered home delivery and catering. They then heard the owner of Victory Garden, the former soft serve at 31 Carmine St., was considering letting someone do a pop-up shop in her store over the winter.

"It’s almost ironic, as we are planning to sell hot soup in a space once dedicated to selling frozen dessert," LeBlanc said in his blog.
Now, Good Stock will have the space for the next five years.
"When Sophia and I started speaking, we realized it was too good of a fit to pass up," LeBlanc said. "The size was perfect, the location was fantastic - it’s right in the middle of one of my favorite neighborhoods."
