Slow cooker meal envy

Slow cooker meals for one week saved me time, money and grocery store trips. My family raved about them and we hardly had any leftovers.

 

I just got a really high speed model slow cooker as an anniversary gift. It has simplified my life considerably in the first week alone. Below are the ingredients for one week of meals that not only saved me time, but also a lot of money and trips to the grocery store.

Day 1: chicken breasts set to cook on high for 4 hours.

It shredded easily and tossed it in a bowl with buffalo sauce and topped with blue cheese crumbles on toasted rolls.

Day 2: pork tenderloin with black beans

Cooked on low for 8 hours while at work - again, it fell apart it was so tender, the onion and black beans served from the broth made an instant dinner.

Day 3: pot roast with veggies

Cooked on low for 8 hours with carrots, potatoes and onions in beef broth. No leftovers.

Day 4: homemade chicken tortilla soup with ingredients from the pantry

Day 5: Shredded pork tacos

Cooked tenderloin on low for 6 hours, added a bottle of green salsa and diced onions. Shredded the meat for tacos, served with rice and guacamole.
