Sodexo prepares Slow Market feast for faculty at Northampton Community College

When faculty returned for spring semester at Northampton Community College (NCC), they were welcomed with a local feast prepared by Sodexo

When faculty returned for spring semester at Northampton Community College (NCC), they were welcomed with a local feast prepared by Sodexo, dining services partner on campus.

The meal was created entirely from ingredients provided by area farmers who sell their products at the SlowMarket held on campus each Wednesday. According to Sodexo General Manager Bob Meyer, the only exception was the oil and vinegar in the salad dressing.

The faculty meal prepared by Sodexo featured a Hungarian cabbage stew, a choice of roasted turkey focaccia, slow-cooked beef brisket, char-grilled pork sausage, roast veef vegan sandwiches, and vuna salad vegan sandwiches with fried blue, Yukon and red potato chips on the side.

Slow Market vendors who provided the ingredients included Backyard Beans, Echo Hill, The Four Shop Bakery, Jett’s Produce, Lapp Farm, Monacacy Coffee, NCC’s Community Garden, Primordia Farm, Rabbit Run Farm and the V-Lish Vegan Soup Company.

“The Slow Market is a sustainable resource for our community where local vendors supply produce, breads, meats, cheeses, candles, coffee, clothing, desserts, canned foods and more through the fall and winter months,” said Meyer. “Everything for sale is locally grown and chemical- and GMO-free.”
