Recipe of the Week: Splenda Banana Nut Bread

A sweet treat without all the sugar.

Lately, I've been searching for recipes that don't have tons of sugar. I resorted to sugar substitute Splenda's website for some tips and I found this one!

It sounds so delicious. I'll be trying it this weekend. Join me?

What you need:

    1 1/3 cups all-purpose flour
    1/2 cup granulated Splenda 
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1 pinch salt
    1 tablespoon canola oil
    1/3 cup reduced fat buttermilk
    2 teaspoons vanilla
    1 1/4 cups mashed bananas
    1/4 cup chopped walnuts

What you need to do:

1. Preheat oven to 350 degrees. 
2. Spray a 9-by-5-inch loaf pan with nonstick cooking spray. Set aside.
3. Blend the dry ingredients in a large mixing bowl. 
4. Separately, mix oil, buttermilk, vanilla and the mashed bananas. 
5. Pour banana mixture into dry ingredients and stir until just mixed.
6. Stir in the chopped walnuts. 
7.  Pour batter into prepared pan and bake for 45 to 55 minutes or until the center is set.
