Recipe of the Week: White Bean Dip

A must-have dip!

This white bean dip is delicious and super simple. You can eat it with bagel chips, toasted pita, corn chips, toast, vegetables…whatever! I've even used it as a sandwich spread.

Enjoy!

What you need:
1 (15-ounce) can cannellini beans, drained and rinsed
4 cloves garlic (I use A LOT of garlic. You can use more or less if you want, too)
2 tablespoons fresh lemon juice
1/3 cup olive oil
1/4 cup (loosely packed) fresh Italian parsley leaves
Salt
Freshly ground black pepper

What you need to do:

Place the beans, garlic, lemon juice, 1/3 cup olive oil, and parsley in a food processor. Pulse until the mixture is coarsely chopped. Season with salt and pepper, to taste. Transfer the bean puree to a small bowl.
