GF Desserts Can be Easy and Incredibly Tasty
Let me introduce a few yummy GF dessert options for your dining pleasure!
If there is one great recipe a chocoholic must have it is the brownie. Everyone who likes chocolate loves brownies. There is no substitute for that sweet treat. Some like them chewy, some like them cakey. Some want nuts and some abhor the addition of such heresies. My brownies pre-GF were decent, nothing spectacular. I was more on the chewy side of the fence. And I always like a glass of cold milk with a big and fresh brownie. So I was ready to eat one after nearly two months GF.
The recipe I use makes an 8x8 block of brownie. It does have nuts. It is chewy but slightly cakey. Frankly I like them better than wheat brownies. You can serve these to anyone and they would never guess that they are wheat free.

Another tasty dessert is the pavlova. It is a meringue cake and is naturally GF. It consists of a one layer meringue that is baked and then cooled in the oven. On top of it you layer some slightly sweetened freshly whipped cream. The top layer is of fruit; some like strawberries, some blueberries, peaches, raspberries. I like to use a mixture of fruit; strawberries, blueberries and kiwi go well together. Peaches and raspberries are also delightful.
This is a dessert where the ingredients listed do not give you a clue as to how delicious the cake will be when eaten bite by bite. The fruit needs to be fresh and ripe; no sugar on it is required. The meringue is slightly soft inside and it melts together with the whipped cream to make a taste treat you will be happy to eat.

I also like making my GF apple walnut coffee cake. It only needs one large apple, some walnuts, cinnamon and sour cream to make it special. A slice of this is sweet, flaky and no one would ever guess it is GF. Easily compiled in a tube baking pan it looks impressive and serves a whole family, whether for breakfast or for supper dessert.
Finally let me say that GF cupcakes are incredibly easy to make and taste as good if not better than wheat ones. My recipe is made in a stand mixer bowl and there is a lot of dump and mixing going on. Easy peezy and when frosted they are a delightful treat for children and adults alike.

Eating GF is not a death sentence, it is an opportunity to eat healthier and safer for those of us who are severely allergic to wheat.
