Today I am grateful for apple pie. Rhubarb is my favorite, but MY apple pie is a close second. Did you get that? Mine, not someone elses. I’m sure many of you are fabulous bakers so the challenge is out there, but I’m particular about my crust and apples. Except I don’t make apple pie for me. . .I make it for my husband. It’s his favorite.
Poor guy has had to be vigilant about his blood sugar, checking it a couple of times every other day. He cut out chocolate almost completely and even shoved a half-eaten piece of chocolate cake down the garbage disposal. Good thing. . .or I would have trash picked for it! He no longer eats candy like it’s a basic food group. He has actually eaten a vegetable in the last 48 hours and has protein every day, although he’d rather just have bread and popcorn! He’s been a very good boy and the proof was in his last official blood test.

Now he’s struggling with dental issues, making chewing difficult and biting impossible. No worries there. I am certain he will be able to choke down the apple pie without a problem. Wanna take bets?
