Opening Of The Capital Grille In Bucks County Just Weeks Away

A Warrington native and Central Bucks South graduate will be managing the new restaurant.

NEWTOWN, PA — The Capital Grille, a high-end steakhouse known for its dry-aged steaks, fresh seafood and world-class wine lists, is just weeks away from opening its doors in Bucks County.

Following an extensive renovation project that has seen the complete transformation of the former Pier One Imports store at the Village at Newtown Shopping Center into a world class fine dining establishment, the restaurant is scheduled to open on Monday, Sept. 9 at 4 p.m.

“We’re excited to get the doors open,” said Bucks County native and Capital Grille Managing Partner Michael Callahan. “We’re looking forward to having our dining rooms full and delivering memorable experiences.”

Welcoming guests at the entrance to the new restaurant are the establishment’s iconic lion statues, a signature symbol of excellence and elegance at Capital Grille locations around the nation and in Costa Rica and Mexico City.

Once inside the doors, guests will pass by a floor-to-ceiling wine cellar regularly housing 3,000 bottles as they make their way to the 25-seat bar and lounge area and the main dining room.

The new restaurant spans 8,562 square feet, including a lounge and three private event spaces including the Capital Room and The Board Room. The 150-seat main dining room features the restaurant's signature Eagle, clocks showing the time in the business capitals of the world, and an open kitchen.

The Capital Grille is best known for its expertly prepared steaks dry aged in-house for 18 to 24 days, a process that achieves incomparable flavor and tenderness.

The Capital Grille's Managing Partner Michael Callahan, a native of Warrington and graduate of Central Bucks South.

According to Callahan, steaks are hand-carved daily by the restaurant’s butcher, with selections including Dry Aged Bone-in NY Strip; Porcini Rubbed Bone-In Ribeye with 15-Year Aged Balsamic; and Sliced Filet Mignon with Cipollini Onions, Wild Mushrooms and Fig Essence, among
others.

The restaurant is also popular for its blend of menu classics and twists on appetizers and sides, artfully prepared using impeccable ingredients. Signature dishes include Pan-Fried Calamari with Hot Cherry Peppers; Lobster Mac ‘N’ Cheese; and Lobster and Crab Cakes.

Dedicated to culinary excellence throughout its menu, a skilled pastry chef prepares desserts each morning from scratch, such as The Capital Grille Cheesecake, served brûlée style, and Coconut Cream Pie.

“We also have a great wine list,” said Callahan, noting that the restaurant pours from a Wine Spectator-recognized list of more than 350 selections, housed in the floor-to-ceiling, temperature-controlled wine cellar.

Guests may also choose from 30 wines rarely offered by the glass, including library vintages and highly sought after limited bottlings.

Through continuous wine training, servers can make personalized recommendations for guests to choose their perfect pairings. Private wine lockers are available by annual lease for the aficionado, offering brass nameplates, specially procured wines and exclusive access to private events
and tastings.

Callahan, who is celebrating 14 years with The Capital Grille, originally started as a server and worked his way up to managing partner.

“I am excited about bringing The Capital Grille to Bucks County, where I grew up,” he said. “Welcoming my community in for an exceptional dining experience holds a special meaning to me.”

Callahan grew up in Warrington Township and is a graduate of Central Bucks South High School.

The arrival of Capital Grille in Bucks County is not only a feather in the cap of Newtown, but also Bucks County. This will be the Capital Grille’s first restaurant in the county, said Callahan.

The Capital Grille is located in the Village at Newtown at 2807 South Eagle Road. The dining room will be open daily for dinner, with hours Sunday from 5-9 p.m., Monday through Thursday from 4-9 p.m., and Friday and Saturday from 4-10 p.m. Complimentary valet will be available. Reservations are now being taken online and are strongly recommended but not required. Reservations can also be made through Open Table.
