Bryson simply loves what he does; he has an enduring passion for baking exquisite goodies for the sheer enjoyment of it, not to mention the sheer enjoyment he creates for his customers when their taste buds tingle from sampling one of his mouth-watering creations. Bryson’s artful and steady hand, combined with his love of baking and years of experience, contribute to the stamina of his palatable business.

“I don’t think twice about experimenting with recipes,” he said. “I’m always on the lookout for a better cupcake. I like trying new combinations and blending mixtures I think will work well together in order to come up with an unusually delicious result and to keep current with flavors.”

What's for Dessert? also keeps in line with the classics.

“We have both traditional ‘comfort’ desserts, as well as some pretty unique selections using fruit buttercream fillings,” Bryson said. “We do our best to maintain quality at prices much lower than some of our competitors."

The bakery carries a vast assortment of decorated cakes, including elaborate wedding cakes, gourmet desserts and hand-made candies. “And they are all made from the finest quality ingredients,” Bryson assured. He wouldn’t have it any other way, pointing out that his best-selling items this time of year are key lime pie, strawberry shortcake, chocolate chip cake and hand-dipped chocolates.

“Cupcakes remain trendy,” Bryson said, “but our ‘cake balls,’ which are a mixture of cake and buttercream dipped in chocolate, are always in demand.”

Bryson said that What’s for Dessert? recently began a weekly newsletter that has turned out to be very popular. In it, he explained, a Dessert of the Week is offered, as well as a weekly meal selection, which has been a huge hit.  

“Sometimes What’s for Dessert? shifts food fare and becomes What’s for Dinner?” Bryson said. “We offer entrees like Turkey Tetrazzini and Beef Pizzaiola, which provide the utmost convenience for busy families on-the-go who are tired of fast food and want to have a nutritional and satisfying meal.”

When asked how he ended up opening a bakery in the Northampton Township community, Bryson said that he grew up in Holland. In 1987 when he was laid off from his job as a chef, he took the advice of a friend and agreed that the timing was right for him to venture out on his own. He’s glad he did, he said, and sums up his success in one word: “consistency.”

A play on words, perhaps, but What’s for Dessert? has been a consistent marker in Holland for 24 years, providing superb and distinctive baked goods and delicacies to satisfy the most discriminating sweet tooth of area residents and beyond.
